Many of you have joined the fan club for pickerel since we began delivering it, so we thought we’d share a bit more about it!
Pickerel (known to anglers or Americans as walleye) is the most sought after freshwater fish in North America. It has a buttery and clean flavour.
Everyday is Christmas for pickerel because they only see the world in shades of red and green.
Their eyes also reflect light like your cat or dog, which helps them hunt better at night (and it’s why they were called “walleye” with their protruding glass eyes!)
And funny enough, their taste buds are on their lips.
Our pickerel is all wild-caught by independent fishermen and women in Lake Erie. You can meet the six families at John O Foods’ website.
It was a big step for us to start offering wild fish. On the farm, we control the water quality, food and environmental impact of all our fish — but with wild, you don’t.
So we found pickerel that is eco-certified by the Marine Stewardship Council, which means it goes through the same rigorous auditing that we do to make sure the fishery is well managed and safe to eat.
Plus the pickerel fillets have a low water content, which is why they’re perfect for burgers and nuggets!
And WALLEYE be damned, it just tastes so good!
