This recipe is from our friend Chef Sadia (on Instagram at @chefsadiayak) and it’s ‘trout’ of this world!
INGREDIENTS
Chef Sadia gives you this list of ingredients as a guide, and lets you choose how much of each to add.
FISH:
- Two fillets of trout, salmon or Arctic char, thawed
- Olive oil
- Garlic powder
- Salt & Pepper
SAUCE:
- Olive oil
- White onion, sliced
- Garlic cloves, chopped
- Mushrooms, sliced
- Paprika
- Red chili flakes
- Cumin powder
- Salt
- Cream
- Parmesan cheese, grated
- Cilantro, to garnish
DIRECTIONS
- Marinate fish fillets with a sprinkle of salt, pepper, olive oil and garlic powder.
- Cook fish in the oven at 350F until done (here’s our cooking tips!)
- Heat olive oil in a pan, and stir fry onions and garlic.
- And mushrooms and all the spices (paprika, red chili flakes, salt and cumin).
- When mushrooms are cooked through, add cream (depends on how saucy you want it) and add parmesan cheese. Simmer to thicken.
- Sprinkle with cilantro and serve.
