Our friend Farhana Batliwalla at @batliwallafarhana dreamed up this creative recipe for Tandoori Trout Koliwada that’s a taste-packed way to enjoy any Springhills trout, salmon or Arctic char!
Ingredients
- Springhills trout, coho salmon or Arctic char, thawed, 400 gms
- Besan (gramflour): 3/4 cup
- 3 tbsp cornstarch powder
- Green chili mint paste : 1tbsp
- Chilli powder: 2-3tsp
- Turmeric powder: 1/2tsp
- Amchur(Dry mango powder): 1tsp
- 2 teaspoons black pepper powder
- Garam masala: 1tsp
- Ajwain: 1tsp
- 2 teaspoons Kashmiri chili powder
- 2 teaspoons paprika powder
- 2 tsp tandoori masala
- Saunf or fennel seed powder : 1tsp
- Salt to taste
- 1 egg white
- Oil for frying
Directions
- Cut the fish into bite sized pieces.
- Add all the ingredients and make a batter.
- Marinate the fish fillets in the batter for 15 to 20 minutes
- Deep fry the fish in oil and serve hot with mint chutney or tomato ketchup.
