This recipe is mango-nificent! 🥠Our new friend Mirna ( @yalla.lets.eat ) created this tropical blend just in time for winter.
INGREDIENTS
Mango Salsa:
- 1 mango diced
- 1/2 cup cherry tomatoes diced
- 1/3 cup red onions chopped
- 1/2 cup fresh cilantro chopped
- 1 lime
- 1 tbs olive oil
- Salt and pepper
Trout:
- 2 trout filets
- 2 cloves garlic crushed
- 1/4 cup olive oil
- Salt and pepper
DIRECTIONS
- Salsa: Dice and chop salsa ingredients, and mix all together. Set aside until the fish is cooked.
- Trout: Mix olive oil, garlic, salt and pepper and divided onto the two rainbow trout filets.
- Place onto lined tray with parchment and bake at 400 degrees for 20 minutes depending on the thickness of the fish.
- Top with the mango salsa and ENJOY with your favorite side.
